Have you asked for help with these problems you are having?
Which Xcode/MonoTouch/MonoDevelop are you using?

I am always creating my UI with XIBs, either with the standalone IB, or with 
the "latest", integrated-to-Xcode one. And I must say, that I've been doing 
this for more than a year, like you.
How/when is it stripping actions from an existing XIB?

In general, my problems with MonoDevelop and XIBs was that sometimes, 
MonoDevelop would not update the source code to reflect the XIB changes, in 
which I case I just had to bring Xcode to the front and then MonoDevelop again. 
But it's been a while since I had to do this.
