When I got started it was with a Mac mini as well and I can say that it does 
run the compiler and emulator nicely. I switched to a Mac Air laptop because I 
sometimes need to show things or work away from my desk. You could also get 
used/refurbished macs as long as they have an Intel processor. The ones from 
the last few years are all pretty good. 

As another reply says you can try MonoTouch and even the compiling and using 
the emulator all for free before getting a device and paying for the licenses. 
This is a great way to see how you are going to like MT (you will probably love 
it)
