What would be the contrast to the word "beer"?  If you say non-beer, 
what does that mean?

Beer is most commonly an alc0holic beverage. But there is non-alcoholic
beer. It is a beverage arrived from fermentation; there are
non-fermented beverages.
Non beer would be a non alcoholic non fermented beverage. Or any
beverage that is not beer.
