Y'all need to read Ellin Keene's book To Understand. She totally gets the idea that we can't teach everything. She narrows the language arts curriculum to what is essential... and I found it very refreshing to read someone telling me to teach LESS and to teach for depth! She will make you feel better and give you ammunition when you have to defend what is right for kids. Another really good book for this time of year is Donald Graves book The Energy to Teach.
