While a certain leap of faith needs to be made (how do I know you are really 
reading and not turning pages), so many of your concerns can be addressed 
through conferences.  Honest conversations, formal and informal, combined with 
some sort of reading log and an occasional response can go a long, long way 
towards satisfying your need to document (an understandable and recognizable 
need).
