Pref - character for quoted text

Most sincere apologies in advance. I know this has been posted before, 
but I've searched high and low and simply cannot find the messages(s) on 
this.

I believe there is a user_pref for changing the character used when 
displaying quoted text in messages. I decided I don't like the 
bar/graphic and want to change it back to the nice, simple >. What it is?
