It all comes down to personal taste in the end. The vertical bar is also
a characteristic feature of format=flowed. For complete WYSIWYG
format=flowed should also be disabled completely... and of course the
safest way to read emails is Ctrl+U... :)

Add the following line to prefs.js:

user_pref("mail.citation_color", "#0000A0");
                                  ^^^^^^^^
                                color of your choice
