Yes, there is a difference. By default, we indeed set to color at all, 
making the renderer fall back to the default (e.g. as in 
Appearance|Colors). Setting it to black would override the default 
(which happens to be black, but could be anything).

The difference is most obvious, if you set the color in your user 
stylesheet, so that e.g. different quote levels have different colors. 
The color preference would override the user stylesheet and make the 
different coloring impossible.

No, there is currently no way in the UI to set it back to none (only by 
editing prefs.js). I consider this a bug and I filed it long ago, but it 
hasn't been deemed important enough to fix it yet.
