Depends on your environment.

I had to widely deploy on hotfix at my last employer, so we baked it into the 
install.
Instead of having to add a separate step to install the hotfix.

Its also useful if you don't want to nuke your wsus server when doing mass 
installs.

to apply.

Or you just use the TS for the image creation where office gets installed (hint 
:)) and have "software updates" install them all. Would take care of new builds 
at least.

Yes, that is correct.  You add the .msp files into the Updates folder.  MS 
Office Cummulative Updates are released every quarter.  The process is tedious 
and requires some patience.

You'll need to download each individual CU, extract the zip which will expose 
the .glb file.  Then, you'll need to extract the .msp from the .glb using the 
extract command.
