I recently had to do something similar. Office baked in and needed a different config for a site. So I created a new msp and patched office during the ts, worked fine. This was adding a couple of components and redefining the default profile but you can quite easily create a msp to remove outlook and lync and apply during a ts step with a condition.
Also, installing the patch is a very quick step in the ts, as opposed to installing office.
