Lisa (and anyone on the list) I am VERY knowledgeable on Celiac's Disease and Diabetes. My 12 year old niece (and child I will never have so is like a daughter to me) has both. At 2 she was diagnosed with Diabetes and 3 they tested her for Celiac's disease (they wait to prevent hitting you with both but it's common for a Type 1 Diabetic to have Celiac's). So for 10 years my family has studied and lived with this disease. About a year ago my mom, sister and myself were tested. Luckily it showed none of us have it but my mom is CERTAIN she has it. She gets allergy reactions when she eats wheat and is even around fresh baked bread at a restaurant.
For anyone that doesn't know it is basically an allergy to wheat. The celia hairs in your stomach can be damaged by the wheat. Long term can turn into cancer. The good news is, if you can manage not to eat it and eliminate it from your diet the hairs can heal up and you can live a normal wonderful life. I can't even tell you how easy and common it is to find wheat free food than it was 10 years ago. Restaurants are even adding wheat free options. I personally prefer the wheat free pasta's to traditional. Lisa, my sister is a hair stylist (in the biz) and SUPER DUPER friendly and open to helping anyone on the topic of diabetes or celiacs. She could give you all her advice on where to shop online and also about saving money with your health insurance. Yes it sucks to give up your favorite foods with wheat but the alternatives aren't as bad as you think. There are some yummie rice or corn flour alternatives.
