An author was coming to my local bookstore to discuss her novel set in Appalachia. The main character was "a strong-willed heroine fighting to survive the hardships of the times." When I went to the reading, I was disappointed to learn the writer had canceled her appearance. The reason? She didn't want to drive in the rain.

The Recipe File

Pasta, Seafood, Eggs and Grains:
Pasta Portofino

from Colorado Colore:
A Palate of Tastes


INGREDIENTS:
12 ounces linguini
1 Tablespoon olive oil
1/4 cup (1/2 stick) butter
12 green onions, chopped
4 ripe tomatoes, chopped
4 medium shallots, chopped
1/2 cup black olives, sliced
1/2 cup green olives, sliced
  Freshly ground pepper to taste
1/2 cup dry white wine
  Fresh parsley (optional)
TO PREPARE:
 
Cook the pasta using package directions; drain.  Cover to keep warm.  Heat the olive oil in a large skillet over medium-high heat.  Add the butter, green onions and tomatoes and mix gently.  Saute for 2 minutes.  Add the shallots, black olives, green olives and pepper and mix well.  Saute for 2 minutes longer.  Stir in the wine.  Reduce the heat to low.  Simmer to the desired consistency, adding additional wine if the mixture becomes too dry.  Place the pasta in a large serving bowl.  Spoon the tomato sauce over the pasta.  Garnish with fresh parsley.  Serve immediately.
