An agent doesn't send an SNMP trap as a MIB file. The MIB file defines the name, contents and meaning of the trap. But a trap is perfectly valid without the corresponding MIB file. You can detect and log it, even if you don't have the MIB file. The only difference is that things will be recorded using numeric OIDs rather than MIB names. (And named values will use the numeric value, rather than the corresponding name).
