As far as I'm aware, it is indeed a way of postponing a message.
Although I haven't needed to use it yet, you can select an existing
mail and choose Edit from the Message menu to resume editing (or
indeed make changes). I've used this a few times for mails that have
had incorrect addresses and it should also work fine on Stored
messages too.
