printing press. They have dozens of pirated software anyways installed
on their system so they wouldn't mind installing a Free one :)

in the business of printing they will print no matter what you give

Here I see two options:
1. Find the Printing Press that accepts files based on FOSS
Apps
2. If not make the Printing Press adapt to FOSS.
none of them is practical ...
