just so you know, on that same page, towards the bottom, there is a choice for "individual package selection" where you can spend an hour or so making sure every type (or 2 or 3 of every type) of program you can imagine is installed. that will get you some "additional programs".

Once installation was complete, and was logged into KDE, no programs were listed on the start menu, and the "additional apps" button on the menu was grayed out. Did I do something incorrect? I have since dug out and installed a copy of Makdrake 10.

that was incorrect, use the latest version, (2006) for many many reasons, security and updated programs. you can download it.

2.) Now using Mandrake 10, the first thing I did was download FireFox. The install directions say "unzip to desired directory". In Linux, what is the equivalent of the "program files" in windows?

boy that's a loaded question, Linux is setup a little differently, you could read all about the 'Linux file system hierarchy' by googling that phrase, just do it to your /home/user folder if you don't yet know what and where to put stuff as root... that will help you not scew up any thing outside your /home.
