what happens if you just boot to a console? does it still reboot
then?

this sounds a lot like a hardware problem. unices generally don't
spontaneously reboot. I've seen power problems do it tho. (I once saw a
machine that would spontaneously reboot if you slammed you fist down on the
table next to it).
