Chris,
        Strictly my opinion - I was raised going to car shows looking at
restored original pieces - hence a bit of a bias - the 'make it stock'
mentality was drilled into me from a young age.
         That having been said - later when my Dad purchased a hot-rod and I
began looking at Custom Truck mags - I began to be impressed by the ability
to customize something and tailor it to a purpose.
         Its your bike - we aren't going to judge you if you decide to hack
it to pieces and turn it into a Cafe - although you might hear the
occasional comment about 'thats not what I'd do'.
         If it were me - and I was looking for a Cafe project, I think I'd
start with a bike that wasn't in pristine condition - perhaps even a bare
frame - and build it up the way I wanted to from the start, as opposed to
starting with a running bike and stripping it.
        Just my thought on the subject.
