Hey Chris, Let me just start by saying that it is your bike. We can't really tell you what to do with it. That being said, I'm very much a stock-look purist. If not restored, then at least to a period appropriate style. I like reversible modifications to good quality examples, and support chopping up rusty, bent or damaged frames and carcasses for the major irreversible modifications.
Personally, I wouldn't carve up a less than common bike like the 550 for a cafe. Heck, I like the look but I'm not even willing to cut into my much more common 90s 750 to make one. Classics can't be replicated, and every good one that is cut into is one less piece of rolling history. A bit sentimental, perhaps, but that is how I feel about such things.
