Just to confirm that the carbs are indeed the problem.... before you go through all that work.
Does this still happen when the engine is warm? (20 mins or so riding...) Does this still happen regardless of throttle setting? What if you short-shift, does it do it then? And if you're 'lugging' like that, does the throttle position make any difference? How about if you start at higher RPM then let the clutch out, does it still sputter?
