Joey, I have a 96 NH750 and 91 ST1100. They are so different it's amazing. The ST is so fast you really need to pay attention to what you're doing. I love both bikes but ride them for very different reasons. I commute 365 on the Nighthawk, living in Hawaii the full faring makes commuting on the ST too hot most days. Plus my commute is through traffic with no place to get up to speed.
I keep the ST on the Big Island of Hawaii (I live on Oahu). The Big Island is an amazing place to ride I bike. Lots of 2 lane highways without much traffic. I can go from sea level to 9,000 feet in 50 miles up some really fun stuff to ride. I'd really love to try an ST 1,000's of miles of mount roads that you have on the mainland. My bike came with a windscreen that is 24 inches tall - 6 over stock. It's way too tall and really causes problems in the heavy winds here. One of these days I'll find a used stock one to replace it. If I lived on the mainland I'd have one for winter and one for summer. The stock seat is a Honda stock seat - not made for long rides. I found a Russel Day Long on eBay for about $120 bucks. It's for someone about 6 feet tall, I'm 6"3'. This makes for a much more upright riding position, which I need because of a bad shoulder, but does put my knees very close to the faring. I was on the Big Island one day for business and did 265 miles in one day plus work - 120 miles starting at 5am, worked for 5 hours, 145 miles back to the other side of the island - flew home and rode my Nighthawk 20 miles home. I wasn't tired until I was about 1/2 way home on the Nighthawk. With the right seat I think you could easily ride 400 miles in a day and not feel tired. Hope this helps.
