Having taken both for a test ride but purchased the ST1100 - I still
owe the group pictures. I wanted both after the test ride but decided
on the ST because it's a Honda. I also find it interesting that you
see more ST's than Concours's - I had the exact opposite experience.
I only saw and rode one ST while at least 5 Concurs's came up.

They are both amazing bikes and were way too much fun on the test
rides let alone now that I own the ST. It is so much fun to ride and
you can cover big distances and not be tired at all. I don't think
you can go wrong with either. On the test ride the ST was a little
better fit for me. Both had the stock seats and I'm 6'3".

All three bikes - ST, Concours or FJR put you in a more forward
leaning position than the Nighthawk or Goldwing, so if you have a bad
shoulder you'll either need a different seat / bar raisers or a
Goldwing.

I also test rode a couple of Goldwing - they just felt like bigger
versions of the Nighthawk and not nearly as aggressive as the other
bikes.
