If those silver-colored crush washers are soft aluminum, they will crush more and give a better seal than the copper ones, but you'll probably be fine with the copper ones. My car's manual transmission came with an aluminum crush washer on the fill hole, and I replaced it with a copper crush washer that I've reused several times. (I replaced the drain plug with a valve.) I've had no problems with it, but my manual transmission isn't pressurized like your hydraulic clutch is.
If I were you, I'd have spent the extra money on the more expensive crush washers, because how many times and how often do you expect to do this job? When it comes to my motorcycles, I don't cut corners like I do with my car. Having said that, I think it's safe to leave the copper washers in there.
