Sadly, upon further investigation, it turns out that Apple Mail 
automatically shows the pictures IF they are already in your address 
book.  Since my own picture is in my own address book it shows up in my 
own e-mails.  There is a way to have Apple Mail also embed the picture 
in mails it sends out, but I don't know how to do it.
