Put in anohter MX record at a higher priority(say 100) than your current
mail server which is probaly 10. This way mail is routed to the second
server if the first one is down

How can I have a fall over mx record
so incase the first mx record fails
meaning the mail server is down
then it sends to the second mx record
where there is another mail server
setup waiting for mail to come
