Robocopy is a NT resource kit utility it has a load of switches you can use to control what gets copied or you can mirror one location with another (make sure you get this syntax round the right way otherwise you could delete your stuff). It is like xcopy but a thousand times better with more control, it sounds as though it would do what you want.
