This is more a cleanup than a fix to buildAll.sh. Instead of having a
set of nested ifs, we use a case statement. So there's one copy of the
"make" lines, vs. two.
I've also changed ZLIBLIB and ZLIBINC overrides to a more bash-friendly
format (it now works).
