Uh, when I was reading about WAP deployment, two things popped up: o- Don't set your WAPs to full power unless absolutely necessary - such as when you have to cover a large space with very few WAPs o- Don't set your WAPs to the same channel. Instead, as much as possible, arrange them so that adjacent WAPs use different, non-overlapping frequencies. It's harder to do in a multi-story environment, of course, but still doable.
