Just chiming in as well to absolutely do the standard Server 2016 and avoid OEM essentials. You'll get two virtual licenses - one for the main/essentials system and one for TImberline.
The total PITA of the Essentials license and hokey virtualization setup is not worth it. At all. Did it once and never again.
