MMMMM not in this part of Texas (DFW area) maybe more south of here. In this area is more about hickory smoked flavor, a pepper based dry rub and if and that's a big IF you use sauce a thin pepper based one but not much of it. And as far as cuts, in this area pork ribs (spares and baby backs), brisket, and chicken rule. On weekends when I am not on call for work I normally fire up my offset smoker and my bullet style smoker and load them both up with ribs and brisket. Just a little charcoal to start off and then all hickory or pecan wood for flavor. It goes all low and slow at about 220 degrees for anywhere from 8-12 hours.
