Saucing is an individual choice.  Some cuts need a sauce.  I prefer a
peppery brisket without additional sauces.  I like my pulled pork to have a
bit of sauce because that smoke can really penetrate the fat, so a nice
vinegar sauce helps to cut that down just a bit, so i don't feel like I'm
eating shredded wood (in flavor, not texture).

BBQ=low and slow.  Sauces are what come after the 'cue is done.
