Jonathan I agree with you. I only mention how the natives BBQ here in Fort
Worth. I am not from here, I am from DM Iowa actually so I am more of a "KC
style" guy myself so I must admit after my brisket is done and right before I
have any I put some KC Masterpiece sauce on it. Normally the only cut that I
eat dry is ribs. But not always -)

Saucing is an individual choice. Some cuts need a sauce. I prefer a peppery
brisket without additional sauces. I like my pulled pork to have a bit of
sauce because that smoke can really penetrate the fat, so a nice vinegar sauce
helps to cut that down just a bit, so i don't feel like I'm eating shredded
wood (in flavor, not texture).

BBQ=low and slow. Sauces are what come after the 'cue is done.

MMMMM not in this part of Texas (DFW area) maybe more south of here.
In this area is more about hickory smoked flavor, a pepper based dry rub and if
and that's a big IF you use sauce a thin pepper based one but not much of it.
And as far as cuts, in this area pork ribs (spares and baby backs), brisket,
and chicken rule.
On weekends when I am not on call for work I normally fire up my offset smoker
and my bullet style smoker and load them both up with ribs and brisket. Just a
little charcoal to start off and then all hickory or pecan wood for flavor. It
goes all low and slow at about 220 degrees for anywhere from 8-12 hours.

I am in the Charlotte area for 2 more weeks. Is there anywhere in NC that
doesn't base their "sauce" on vinegar and or mustard?

IE Maintenance policies just do not work. Never have and probably never will.
That may a specific set of issues in the TS/RDS/Citrix/VDI world but I stay
away from IE Maintenance policies like I stay away from Carolina "BBQ Sauce".
