I always do it by server type/class as much as possible (DC, Exchange, etc) and 
then any "one-offs" individually.

For AV scanning/access it's recommended to exclude specific files/folders on 
DC's, and member servers, SQL servers, etc.
 Do you guys have a different exclusion policy for each class of server, or do 
you just have one master exclusion setting that you apply to all servers 
weather they'd need it or not?

Obviously the most secure way is to be specific to each server role, but I 
don't know of the management overhead is worth it. Our server environment here 
isn't as static as you might think...
