You can't have both Workstation and Server installed on the same machine? Or 
running at the same time? The latter can be explained because only one product 
can be using the hardware virtualisation components at any one time.

As for running Ex2007 in VMWare Server. It works just fine (with the usual 
caveats around virtualisation of any product). This email is coming to you via 
Exchange 2007 hosted in VMWare Server.

I can say for sure this works under Workstation 6.0.2.  I have WS installed 
under Server 2003 R2 Std x32.  I was able to load up Server 2003 R2 Std x64 
with no problems.  I am working my way thru Kevin Miller's excellent study 
guide for the 70-236 Exchange 2007 Install exam.

I have downloaded the free VMware Server 1.0.4 but you can't have both WS and 
Server loaded on the same box.  But I am sure Server x64 and Ex 2007 would lab 
out just fine with VMware Server.
