Running Exchange on a VM is like the elephant in the corner. Everyone knows it's there but nobody wants to talk about it. That said, I have two production Exchange 2003 servers running on VMWare ESX. Backend is all NetApp running over 1GB iSCSI. Tastes great, less filling!
