We were going to cluster it and try it in the lab and try to see what our
performance is.  Our serves will be DL585, quad proc quad core, with 64GB
Ram.  Attached will be a NetAPP 6080 with fiber channel connections.  I'm
not sure IO issues will be a concern.  However, MS is strongly recommending
not to virtualizing the back ends and the SQL boxes. (SQL boxes are nowhere
near taxed)  In fact, no server in our capacity planner had processor
utilization over 25% peak and very low IO requests....

Exchange 2007 is more friendly for virtualization since in runs primarily
in memory where Exchange 2003 did more writing to disk. I/O issues have
been reported by some where others it has not been a problem. Part of that
mostly likely is due to your network and SAN setup. Are you going to be
clustering Exchange in your VMware environment?
