I'm guessing that ESX is trying to resolve it's own FQDN when booting, and chances are that its FQDN is its hostname plus the AD domain name. It seems to me that if you're going to go to the effort of having a physical Windows DNS server for redundancy purposes, you might as well make it a DC, too.
