Try PC-BSD (http://www.pcbsd.org/). It's FreeBSD all nice and clean and runs from an installable CD, though I'm not a big fan of it's pbi packaging system - I prefer building from source in the ports system.
I run FreeBSD for all of my network monitoring stuff so far, including ntop, tcpdump, netdisco, etc. I've also built routers on top of FreeBSD - not sophisticated stuff mind you, just a buncha NICs in a box with it designated as a gateway to separate networks, but it all works just great with multiple NICs. I prefer XFCE4 as a window manager, as it's fairly lightweight and looks good.
