Does this DC have any other roles? (File server or whatever.) I’m getting at the question of why do P2V at all? Simply standing up a new DC in VM land might be a better idea depending on the circumstances.
I think you also need to think about why you want to go this route. Creating a new VM environment for one VM doesn’t make a lot of sense to me, but I could be missing part of the equation.
