You definitely want the 5x2T option. Going with a huge 1x10T LUN is asking for trouble one day. The easiest example is if you ever have to chkdsk one of those LUNs. Running chkdsk on a 10T volume is going to take FOREVER and you will be completely offline for that period of time.
I'd concur with Martin's advice that you a) shouldn't thin provision unless you have the monitoring and trending capabilities to manage it and b) you want a vendor that lets you adjust LUN sizes on the fly.
