Some things we are early adopters, some things we are late to the party. The "new" Office was a late to the party deal. We found that by the time we migrated, a good majority of the employees were already using the newer versions at home. We had made pretty extensive training plans, only to find we didn't need them. I would suggest if you have any plug ins, macros, customizations, etc., that you run through extensive compatibility testing. Let representative uses, as Jonathan suggested, do the testing. That will then give you a good clue as to any training requirements.
