Well, email address is set by Exchange. Depending on your version of Exchange, you'll either need a recipient policy or an e-mail address policy. Here are some e-mail address template examples:
[cid:[email protected]] As for anything else - generally, if you want specific values, you need to be using a provisioning system or using Copy... from ADUC.
