You're on the right track so far. According to the Ubuntu documentation GRUB2 isn't meant to have its grub.cfg edited by hand; instead, you're supposed to edit /etc/default/grub. I'm not 100% sure that file will still exist based on how you're doing your install but even if you edit it on the LiveCD while you're booted you only need to do it once. Once you execute "update-grub" your changes will be copied into the /boot/grub/grub.cfg.
