The dish is challenging here in the states, because it's tough to find a rooster at your local megamart. You need a tough old bird that can stand up to all the boiling. If you have access to a farm/chickens/rooster. Roasting chickens available to most consumers can't take the boiling and are designed to be tender with roasting, something that rooster above would never be without the long cooking time.
