2 hours is a good number. Lately I have migrated users from XP to Win7, and Win7's migration tool is really good, it even retains the memorized autofill pieces. Soup to nuts is generally in the 2 hour range, occasionally the moving of data from one PC to another is the biggest single chunk of time.
There is the occasional 3-4hr system, but almost never a sub 1hr system. Obvious economies of scale in power-up for initial image since I can unbox and power several machines at once if I'm provided with enough working space.
