You don't provide nearly enough information to be specific to your case, so
I'll be specific to mine.

My company was rapidly growing in the closet.  When I started with the
firm (not in IT, at the time) there was one (Novell) server.  When I took
over IT there were three (Windows, Windows XP, and the Novell that the other
guy wouldn't kill off) servers.  Within a year, I had demands for 3 more and
a need for 2 more from the IT side of things (AV Management and WSUS).  If
you virtualize, you can provision servers (depending on licensing) so that
only one app is installed on a server.  This is almost a necessity for line
of business apps we run.  It's also nice for keeping the AV management
server, file and print services, email and directory services on their own
server instance.

If you virtualize storage, as I did at the time, you can also pursue high
availability options.  Even without high availability, being able to bring a
vitrual machine up on another physical host with 2 minutes of effort is
really nice.
