Yet another option I've done in the past is:

1. Download Ubuntu ISO "live CD" image.
2. Burn image to CD.
3. Boot said CD.
4. Plug in USB flash drive.
5. Tell live CD to install to USB flash drive.

  A USB flash drive appears to the host as a hard drive, so you can
install to it just as well as you can to a spinning disk.
