In the enterprise market, the RAM used per server is going to be much higher, since the I/O is all delivered from enterprise EMC/NetApp/3PAR/etc. SAN
I already have 144GB in all my current VM host servers. Our smallest is 72GB (and we have 24 of those). For our Hyper-V boxes, I would be paying for 2x or 4x Win2k8/Win2k8 R2 Data Center Edition licenses per host. At EA rates, that's very cheap.
