Well, I wasn't thinking "responsible" in the legal way, I was more wondering
who is usually supposed to handle installing anti-malware/anti-virus and
installing Windows Updates, that sort of thing.

Depends on a number of things, but it certainly should be defined in the
Terms of Service that you agreed to. What does IT say?

Most ISPs/hosters limit themselves to "reasonable care". That has enough
wiggle-room to get them out of almost anything other than allowing you to
terminate your contract and go elsewhere.

Our website was attacked and malware posted on it apparently over the
weekend. I'm not sure, but I don't think there is any antivirus /
anti-malware on the virtual server we are renting. Who's responsibility is
it *normally* to handle security and Microsoft updates on a virtual server?
I don't know the terms of our contract, so I can't say whether or not the
hosting company is in violation of those terms or not. Just wondering how
these things normally work.
