I still see lots of character based screens in businesses that I bet are terminals to a Unix/linux server...I used to do apps where one Pentium server would support 20-30-100-200 dumb screens. Much more efficient than TS, and decades older. GUI? There were GUI terminal addons (eg run on an old surplus PC), and I think even X-Windows is largely distributed over a network.
I presume you are not saying linux/Unix has no equivalent of server-based processing...(because that's what it primarily is, and TS is largely an attempt to mimic this especially for remote connections).
